Lion’s Mane “Crab” Cakes

Ingredients

  • 1 pound Bears head mushrooms, chopped to the size of lump crab meat
  • 1 cup Panko bread crumbs
  • 1 egg
  • 1 green onions
  • 2 tablespoons mayonnaise
  • 1 tablespoons dry mustard
  • 1 tablespoons creole seasoning
  • 4 tablespoons unsalted butter or olive oil

Instructions

  1. Combine all ingredients in a large bowl.
  2. Shape out 8 patties and set aside.
  3. In large skillet over medium high heat, melt butter or heat olive oil.
  4. Fry patties for 3-4 minutes per side, until golden brown and crispy.
