Sweet Potato-Turnip Latkes


  • 1 pound sweet potatoes
  • ½ pound turnips
  • ½ cup minced onion
  • 1 teaspoon salt
  • Freshly ground pepper
  • 1 egg
  • 6 Tablespoons flour
  • Oil for frying


  1. Peel and grate the sweet potatoes and turnips. Steam the  vegetables for 2 minutes until just tender and slightly moistened. Transfer to a medium bowl. Add the onion, salt, and a sprinkling of black pepper. Stir in the egg and flour.
  2. Form a heaping tablespoon of batter into a patty by hand (do not overwork). Repeat to make 12 latkes.
  3. Heat a thin layer of oil in a large, heavy bottomed fry pan over medium heat. Lay 4-5 latkes in the oil, being careful not to overcrowd. Cook until golden, about 4 minutes. Flip, press with spatula to flatten slightly. Cook until golden, another 2 minutes or so. Serve with apple sauce or sour cream
